My New Favorite Cookie


I wanted to bake some cookies to send to my Dad for Father’s Day. I decided to work with what I had around the house and came up with an incredible cookie. Oatmeal cookies with toffee bits and butterscotch chips. So easy to make and super yummy!

Oatmeal Butterscotch Toffee Cookies
About 4 dozen cookies

Ingredients:

1 cup (2 sticks) butter, softened
2 cups packed light brown sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups quick-cooking oats
1-1/3 cups (8 oz. pkg.) HEATH BITS ‘O BRICKLE Toffee Bits
1/2 pkg. butterscotch chips
2/3 cup chopped walnuts, optional (I put them in for my Dad who loves them but I’m married to a non nut lover so they’d never fly in our house)

Directions:

Heat oven to 360°F. Beat butter, brown sugar, eggs and vanilla until well blended. Add flour, baking soda, cinnamon and salt; beat until blended.
Stir in oats, toffee bits and butterscotch chips with spoon. Drop dough by rounded teaspoons about 2 inches apart onto prepared sheet.
Bake 8 minutes or until edges are lightly browned. Cool 5 minutes; remove to wire rack.
